PRODUCTION ZONE: We produce this wine in the youngest vineyards which lie in the famous area of Montalcino with north-west exposure and 350 mt above the see level.
SOIL COMPOSITION: Marl and formations of shaley marl.
TYPE: Rosso di Montalcino DOC.
GRAPE MIX: 100% Sangiovese.
TRAINING SYSTEM: 5.200 vines per hectare. The pruning system is “Cordone speronato”.
HARVESTING: Manual harvesting in rack in the first half of October.
VINIFICATION: Total destemming, followed by a brief cold maceration before the alcoholic fermentation. The latter and the maceration last for 15 days at least according to the quality of the grape under a controlled temperature of 30 degrees centigrade.
MATURATION: 12 months in different oak casks which are partly new and partly second-hand then the wine refines in the bottles.
SENSORY CHARACTERISTICS: Intense ruby red colour. A resolute vinous fragrance with ripe wild berries, added to a light spicy component. At the taste it is warm, soft and full, solid with velvety tannins that are not aggressive. It has a good persistence.
