PRODUCTION ZONE: We produce BRUNELLO DI MONTALCINO with grapes harvested in different plots from the reknown area of Montalcino. The altitude of the vineyard is 350 mt above the see level with north-west and south-east exposures.
SOIL COMPOSITION: Jasper and clayey schists.
TYPE: Brunello di Monatlcino DOCG.
GRAPE MIX : 100% Sangiovese.
TRAINING SYSTEM: 5500 vines per hectare. The pruning system is “Cordone speronato”.
HARVESTING: Manual harvesting in rack in the first half of October.
VINIFICATION: after the total destemming, we have a spontaneous fermentation which last 20 days at least, always under temperature control under 30 degrees centigrade.
MATURATION: 12 months in French oak small barrel (allier), which are partly new and partly second-hand. Then, the wine stays for 12 months in Slavonian oak casks and it finally matures in bottles for 6 months at least.
SENSORY CHARACTERISTICS: Deep ruby red colour with garnet reflections. It has a clean, elegant, intense and complex fragrance. It is rich of ethereal, ripe wild berries, morel and spices scents, with a soft pinch of vanilla and citrus fruits. At the beginning of the taste it is soft, then it is full-bodied, solid and warm. The tannins are present but soft. It has a good persistence and aging capacity.
